The Best Beignets are at Bon Bon Boutique! June 17, 2011

I have a rule, and that rule is I do not allow myself to cook.

Part of that rule stems from the fact that I honestly can't cook, but when I do and it does not end up a charred brick of something unrecognizable, I usually end up eating about four servings more than I ought to.

So it goes without saying that when pasty chef Kathryn Rhysata of the new Bon Bon Boutique offered me a plate with four different kinds of fresh beignets, not one of those crispy, decadent pastries made it back to the kitchen alive.

Situated on a refreshingly modest green plot of land amidst the urban sprawl of the Marketplace, the Bon Bon Boutique earned its bearings"and its popularity"here in RhyDin in a remarkably humble way. The bakery, which had its grand opening on June eighth of this year, has much the same simplicity and quaintness of its original vision, which came about surprisingly offhandedly despite the shop's now-blossoming fame.

"I normally bring pastries to the inn and a lot of people said they were really good and I should open up a shop. That it would do really well. So I decided I would try since people really seem to like them," Rhysata told the Post recently.

As it turns out, Bon Bon is doing more than well. It has already made the top ten list of RhyDin's must-visit newest eateries in RhyDin Cuisine Magazine, and the resounding praise from well-fed patrons at the city's famous Red Dragon Inn remains steady. But the Boutique's stellar desserts and creative wedding cakes aren't the only things that warrant positive attention. As it turns out, one of the bakery's most charming aspects is its overall design, which is old-fashioned and cozy enough to encourage a lengthier stay.

"I don't want it to be like place of business feels," said Rhysata. "Just a place to come to and order something you might like and sit if you have the time. Just' enjoy people and company. Relax" I guess I am weird in hoping people feel that way but that is what I was trying for."

People-pleasing seems to be at the top of this chef's list of priorities, so it is no wonder that her clientele keeps coming back. Moreover, one of Rhysata's claims to fame is that she is willing to explore virtually any recipe or pastry idea within the realm of possibility, which expands the list of potential customers to include more than just humans. And though she has not had any particularly outlandish requests yet, she is more than willing to give just about anything a try " from steak and apple cobbler to beef-flavored cookies.

While the business so far is small, the Boutique has only been open two weeks. And with its wedding cake and delivery service, in addition to free samples provided constantly in the Red Dragon Inn, chances are Rhysata will need an extra pair of hands or four in the coming months.

"I just hope it stays open so I can continue to make stuff people might like," Rhysata explained. "I don't really have any dreams or hopes for it past that. Someone asked me if I wanted to expand a franchise at one time but really I don't see the point. I mean as long as I can deliver things from here there is no reason to. But' if by chance things do work out really well I will maybe expand the sitting areas so more people can sit and relax.?

The Bon Bon Boutique is open Monday through Saturday from five AM to five PM. All wedding cakes should be ordered at least twenty-four hours in advance.
