Since the concept behind the isle and the pard is based around this drink and Chas is intent on perfecting it...

Absinthe Returns After 100-Year Absence

So what does the notorious liquor taste like?

"It's very much like anisette, black licorice or sambuca, but it's 10 times more intense," Gasbarro said. "You only want to have a little glass or a shot."

I find that article an oversimplification of a very complex drink. And the average person should not drink it straight up. The more common means of imbibing include a special glass, a special spoon and mixing the absinthe with sugar and ice water. They did not say where the absinthe was 'brought in' from. I'd be curious to find that out.

Further, the guy in the article said they reduced the wormwood to reduce the thujone. He doesn't seem to be as knowledgable on Absinthe as he seems to want people to think. I'm no expert but I've done a lot of research. In everything I've read, they honestly should not have had to reduce the wormwood to reduce the thujone since the original recipes brewed by the respected distillers had far LESS thugone than the current FDA standards say is acceptable for consumption. (An enthusiast found an original bottle and had it tested, reverse engineered the recipe and discovered this fact.)

It was the other less reputable distillers who were adding other crap to get the right color and flavor that caused the issues.
