It was strange to be settled again, living out of two rooms in an old boarding house, and working here, at a deli. Not exactly the kind of place Genny was used to working in, but she would get used to it. After all, she was allowed to do what she loved for a living; what could be better than that, right? And no one said anything much about the fact that unless she was baking, she always wore her gloves.

Her handiwork was laid out by the till in a beautiful leather-bound photo-album, within which prospective buyers could browse the portfolio of decorated cakes already made and sold by her, Genevieve Phayre, now full-time employed here at O'Dell's Deli. They were only pictures, examples of cakes made, not an exhaustive study of any cake she could possibly make.

And shy though she was, she was available to anyone who had questions, right down to the smallest detail.Birthdays, celebrations, Christmas, weddings ... you name it, she could and would bake for it!

Made for a 21st birthday. Chocolate sponge with orange cream. Royal icing used.

Another 21st birthday cake. Bottom tier is plain vanilla sponge with lemon cream, top tier is lemon sponge with buttercream. Royal and fondant icing used.

Children's birthday cake. Both tiers are vanilla sponge with jam between layers. The Tinkerbell fairy is made from sugar icing - in uneaten, will turn hard and not rot. Royal and fondant modelling icing used.

A 70th birthday cake. Soft walnut sponge, no cream for preference, soft royal and fondant icing used.

Christmas cake. Rich fruit cake covered with plain royal icing, then decorated with a mixture of fondant icing, both soft and for modelling, gummy bears and smarties. The trees were made from dyed white chocolate. Sadly, Santa and his reindeer are plastic.

Easter cake. Double layered vanilla sponge with hazelnut buttercream, covered with royal icing and the decorations moulded stop that with fondant and modelling icing. As with the Tinkerbell cake, the top can be lifted off and preserved.

Wedding cake. Alternating tiers of blue-dyed vanilla sponge with chocolate buttercream, and dark chocolate sponge with mint buttercream. Again, royal and fondant icing used on the tiers. The Corpse Bride and her groom are modelled out of sugared icing, and can be eaten or preserved.

Another birthday cake. Vanilla sponge, raspberry jelly and buttercream, royal icing to decorate. Also provided for a gluten-free, lactose-free baby shower. Rich fruit cake, made with gluten-free flour and no milk, and royal icing to decorate.

A Hallowe'en wedding cake. Three alternating tiers of fruit cake and fruit sponge, decorated with royal and fondant icing. All pumpkins are made from modelling fondant icing with an orange jelly centre.

A series of cakes made for an entomologist's birthday party. Requested a selection of insects with emphasis on spiders. Each cake serves two adults, each made with either vanilla, chocolate or coffee sponge, all with buttercream. Again, royal icing was used, and spun sugar glass for the legs.

Made for an Arabian Nights themed surprise engagement party. Cinnamon and nutmeg spiced vanilla sponge with honeyed buttercream, decorated with royal and fondant icing. The top box opened to reveal the engagement ring wrapped in velvet.
